Introducing Our New Elderflower Pale Ale
We’re thrilled to unveil our latest small-batch brew, a refreshingly light Elderflower Pale Ale created in collaboration with our neighbours and friends at Thyme Restaurant. This limited-edition beer is the perfect marriage of local flavour, thoughtful brewing and culinary craftsmanship.
At the heart of this beer is locally foraged elderflower, hand-picked from hedgerows around Co. Westmeath. The elderflower imparts a beautiful floral aroma with subtle tropical fruit notes, delivering a drinking experience that is both delicate and unique. It’s a true celebration of the Irish countryside in full bloom.
To complement the elderflower, we have used Citra hops, known for their bright and zesty citrus characteristics. The result is a beer with a balanced flavour profile — floral and tropical up front, followed by a gentle citrus twist that lingers on the palate.
This pale ale is brewed using a single Irish malt from Loughran’s in Co. Louth, chosen for its clean, slightly sweet backbone that lets the elderflower and hops shine. We fermented it on yeast from WHC Lab in Wicklow, renowned for their clarity of flavour.
The beer pours a bright golden colour with a brilliant white head. It’s lightly carbonated to enhance drinkability without overwhelming the subtle aromatics.
At just 4.2% ABV, this is a light, sessionable beer that’s perfect for warm afternoons, long evenings and pairing with fresh summer dishes. It’s one of those brews you’ll come back to again and again…easy to enjoy, hard to forget.
